If possible pursue a professional career. A profession is an organized body of knowledge that is self-regulating. You need some kind of specialized training and certification to join.
Some professions are recognized by law which gives them unusual bargaining power. Look for professions backed by an Act of Parliament.
Choose a profession that is difficult to join and where the certified members are few. This scarcity will allow you to earn more.
Go into a profession where there is a high demand for your services. This will enable you to command high pay.
If possible go for the traditional professions and complement them with related emerging professions. For example, study medicine and then do medical law. Or do engineering and add on energy economics or project finance. This broad unique and specialized skillset will open many opportunities for you.
Personally being both an Engineer and an Accountant has helped me to stand out wherever I have been employed.
